Golden Sweet Potato Medley
Ingredients
- 2 large sweet potatoes, diced into 1-inch cubes leave skin on if organic
- 1 tbsp extra virgin olive oil or avocado oil
- 1 tsp ground turmeric
- 1 tbsp fresh rosemary, finely chopped or 1 tsp dried
- 1/2 tsp sea salt
- Cracked black pepper, to taste
- Optional: pinch of smoked paprika or cayenne for heat
Instructions
- Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper.
- Toss potatoes in a large bowl with olive oil, turmeric, rosemary, salt, pepper, and any optional spices.
- Spread evenly on the prepared baking sheet, avoiding overlap.
- Roast for 30–35 minutes, flipping once halfway, until golden and crispy at the edges.
- Serve warm and garnish with fresh herbs if desired.
