Spiced Date Syrup Christmas Sweet Rolls (Grain-Free & Festive)
Ingredients
- Dough Grain-Free, Yeast-Free Option
- 2 cups almond flour
- ¼ cup coconut flour
- ¼ cup unflavored whey protein isolate adds elasticity
- 1 tbsp psyllium husk powder
- 1½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- 2 eggs
- ¼ cup melted butter or coconut oil
- 2 tbsp Swerve Granular or allulose
- 1½ tsp apple cider vinegar
- ¼ cup warm almond milk
- Filling
- ⅓ cup date syrup
- 1 tsp cinnamon
- ½ tsp cardamom
- Zest of ½ an orange
- Pinch of salt
- Optional: 1–2 tbsp chopped walnuts or pecans
- Optional Glaze
- 2 tbsp cream cheese softened
- 2 tbsp Swerve Confectioners
- 1 –2 tsp almond milk
- Splash of vanilla or orange extract
Instructions
- Step 1: Make the Dough
- In a large bowl, whisk almond flour, coconut flour, whey, psyllium, baking powder, soda, and salt.
- In a second bowl, whisk eggs, butter, sweetener, vinegar, and warm almond milk.
- Combine wet and dry ingredients. Stir into a dough. Let rest 5–10 minutes to thicken.
- 💡 This is a no-yeast dough for simplicity — but can be adapted with dry yeast for a longer, fluffier rise if desired.
- Step 2: Roll & Fill
- Place dough between two sheets of parchment and roll into a rectangle (≈ 10×8″).
- Spread the date syrup mixture over the dough.
- Starting from the long edge, roll tightly into a log.
- Slice into 8 even rolls using a sharp knife or floss.
- Arrange in greased 8″ round pan, leaving slight space between.
- Step 3: Bake
- Preheat oven to 350°F (conventional) or 325°F (convection).
- Bake rolls for 20–25 minutes, until golden and set.
- Let cool slightly before glazing.
- Step 4: Glaze & Finish
- Whisk softened cream cheese, confectioners sweetener, and almond milk until smooth.
- Drizzle over warm rolls.
- Garnish with extra orange zest, toasted nuts, or crushed peppermint (festive twist).
