Vanilla Bean Chia Parfait with Citrus & Berries
Ingredients
- Vanilla Chia Layer
- 2 cups unsweetened coconut milk or almond milk
- ½ cup chia seeds
- 3 tbsp honey or maple syrup
- 1 tsp vanilla extract or ½ vanilla bean scraped
- Pinch sea salt
- Fruit Layer
- 1 cup strawberries sliced
- ½ cup blueberries
- 1 orange segmented
- 1 kiwi sliced
- Garnish
- Toasted coconut flakes
- Fresh mint
- Extra drizzle honey
Instructions
- Vanilla Chia Layer
- 2 cups unsweetened coconut milk (or almond milk)
- ½ cup chia seeds
- 3 tbsp honey or maple syrup

- Pinch sea salt
- Fruit Layer

- 1️⃣ Make Chia Base
- Whisk coconut milk, honey, vanilla, and salt until smooth.
- Stir in chia seeds thoroughly.
- Let sit 5 minutes, whisk again to prevent clumping.
- Cover and refrigerate at least 4 hours or overnight until thickened.
- 2️⃣ Assemble
- Spoon chia pudding into clear glasses.
- Layer with mixed fruit.
- Repeat layers for a beautiful striped effect.
- 3️⃣ Finish
- Top with coconut flakes, mint leaves, and a light honey drizzle.
- Serve chilled.
