1baguette or gluten-free artisan loaf, sliced into 12 pieces
1tbspolive oil
1cupwhole milk ricotta cheese
1/2tsplemon zestoptional, to brighten the ricotta
3/4cupcherry tomatoes, finely diced
1/2cupfresh blueberries
6fresh6–8 basil leaves, finely chopped

Instructions
Toast the Bread: Preheat oven to 400°F (200°C). Lightly brush baguette slices with olive oil and place on a baking sheet. Toast for 7–10 minutes until golden and crisp.
Whip the Ricotta: In a bowl, stir together ricotta with lemon zest, a pinch of salt, and black pepper until light and fluffy.
