Beat softened butter and sugar until light and fluffy (2–3 minutes).
This step incorporates air and helps create a tender crumb.
3️⃣ Add Eggs
Add eggs one at a time, mixing well after each.
4️⃣ Add Flavor
Mix in lemon zest, lemon juice, and vanilla.
5️⃣ Combine Dry Ingredients
In a separate bowl, whisk flour, salt, baking powder, and baking soda.
6️⃣ Alternate & Mix
Add dry ingredients in two additions, alternating with milk.
Mix just until combined — do not overmix.
7️⃣ Bake
Pour into prepared loaf pan.
Bake 50–60 minutes, or until a toothpick inserted in center comes out clean.
If browning too quickly, tent loosely with foil after 40 minutes.
8️⃣ Cool
Cool in pan 10–15 minutes, then transfer to rack.
9️⃣ Glaze (Optional)
Whisk powdered sugar and lemon juice until smooth.
Drizzle over fully cooled loaf.
