Creamy Spiced Pumpkin & Salsa Soup

Creamy Spiced Pumpkin & Salsa Soup

Velvety pumpkin, warming autumn spices, and a surprising savory twist.
This fabulously flavorful pumpkin soup is anything but ordinary! Rich pumpkin purée meets the zesty character of chunky salsa, the earthy warmth of turmeric, and fragrant autumn spices in a wonderfully creamy, comforting soup.
A splash of apple cider vinegar brightens the flavors, while almond milk and just a touch of heavy cream create a silky texture without making the soup overly rich. A hint of stevia balances the savory and tangy ingredients without added sugar.
The result is a beautiful golden-orange soup with a surprising depth of flavor—perfect for chilly autumn evenings, elegant holiday gatherings, or a nourishing lunch.

Ingredients

  • 3 cans 15 oz each pumpkin purée (not pumpkin pie filling)
  • 1 cup chunky salsa approximately 260 g, mild or medium
  • 3 cups unsweetened plain almond milk 720 mL, plus additional as needed
  • 2 tbsp heavy whipping cream 30 mL
  • 2 tbsp apple cider vinegar 30 mL
  • Stevia powder a tiny dash, to taste
  • 2 tbsp ground turmeric
  • 1 tsp ground cinnamon
  • ½ tsp ground allspice
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ½ tsp freshly ground black pepper or to taste
  • 1 tsp sea salt or to taste

Instructions

  • Prepare the Pumpkin Base
  • In a large, heavy-bottomed soup pot, combine the pumpkin purée, chunky salsa, and 2½ cups of the almond milk.
  • Whisk over medium-low heat until the pumpkin becomes smooth and evenly incorporated. Reserve the remaining almond milk for adjusting the consistency.
  • Incorporate the Spices
  • In a small bowl, combine the turmeric, cinnamon, allspice, cloves, nutmeg, black pepper, and sea salt.
  • Sprinkle the spice blend gradually into the warm pumpkin mixture, whisking continuously to distribute the seasonings evenly and prevent clumping.
  • Gently Simmer
  • Reduce the heat to low and allow the soup to simmer gently for 15–20 minutes, stirring frequently to prevent the pumpkin from sticking.
  • This allows the savory salsa and aromatic spices to mingle with the natural sweetness of the pumpkin.
  • Avoid a vigorous boil, as the thick pumpkin mixture can splatter.
  • Add the Creamy Finish
  • Stir in the heavy whipping cream and remaining ½ cup almond milk.
  • For a thinner, lighter soup, gradually add more almond milk until the desired consistency is achieved.
  • Balance the Flavors
  • Stir in the apple cider vinegar and a tiny dash of stevia.
  • Taste the soup and adjust the salt, pepper, and sweetness as needed. The vinegar should brighten the pumpkin and salsa without overpowering the warming spices.
  • Serve Warm
  • Ladle into bowls and serve immediately.
  • For an elegant presentation, garnish with a delicate swirl of cream, freshly cracked black pepper, or a light dusting of cinnamon.

Notes

Chef’s Notes & Ingredient Functionality

Pumpkin Purée: Provides the naturally thick, velvety foundation of the soup, along with fiber and naturally occurring beta-carotene.
Chunky Salsa: Introduces tomatoes, peppers, onions, and savory seasonings that create a delicious contrast to the subtly sweet pumpkin.
Turmeric: Gives the soup a rich golden color and a distinctly earthy, slightly peppery character.
Cinnamon, Allspice, Cloves & Nutmeg: Create aromatic warmth and complexity without requiring added sugar.
Unsweetened Almond Milk: Lightens the soup while maintaining a creamy consistency.
Heavy Whipping Cream: Adds richness and a silky finish with only a small amount required.
Apple Cider Vinegar: Provides acidity to balance the richness and round out the soup’s flavor.
Stevia: Balances the tangy ingredients without introducing added sugar.

Suggested Variations

Extra Creamy: Replace ½ cup of the almond milk with unsweetened coconut milk for a richer texture and subtle coconut flavor.
Extra Savory: Add ½ tsp garlic powder or a pinch of smoked paprika to complement the salsa.
Spicier: Use medium or hot chunky salsa, or add a little cayenne pepper.
More Delicate Spice Profile: Reduce turmeric to 1 tbsp for a gentler earthy flavor.
Dairy-Free: Omit the heavy cream and replace it with 2 tbsp unsweetened coconut cream.
