  • Pinch of flaky sea salt

Instructions

  • Prepare the Dough
  • In a large mixing bowl combine:
  • Bread flour
  • Salt
  • Instant yeast
  • Whisk together.
  • Mix warm water, olive oil, and honey.
  • Pour into the flour mixture.
  • Mix until a shaggy dough forms.
  • Knead
  • Knead for 8–10 minutes until smooth and elastic.
  • The dough should feel soft but only slightly tacky.
  • First Rise
  • Place dough in a lightly oiled bowl.
  • Cover.
  • Allow to rise until doubled in size (about 90–120 minutes).
  • Shape
  • Turn dough onto a lightly floured surface.
  • Shape into a round boule or rustic oval.
  • Place on parchment paper or in a floured proofing basket.
  • Cover.
  • Rise another 45 minutes.
  • Bake
  • Preheat oven to 450°F (232°C).
  • Place a Dutch oven inside while preheating.
  • Carefully transfer dough into the hot Dutch oven.
  • Score the top with a sharp knife.
  • Bake:

  • 8–10 minutes uncovered until deep golden brown.

  • Cool
  • Allow bread to cool at least 30 minutes before slicing.

  • While the bread cools:

  • Lemon zest
  • Pepper
  • Sea salt
