Instructions

Bloom Gelatin:

  • Place 3 tbsp cold water in a small bowl.
  • Sprinkle gelatin evenly over the water and allow it to bloom 5 minutes.

Prepare Passion Fruit Base:

  • In a saucepan combine:
    -Passion Fruit Pulp
    -Sweetener
    Lime Juice
  • Warm gently over medium-low heat until just steaming.
  • Add the bloomed gelatin and stir until fully dissolved.
  • Allow mixture to cool slightly.

Prepare Coconut Cream:

  • In a mixing bowl whisk together coconut cream, yogurt, & sweetener.
  • Whip lightly until smooth and fluffy.
  • Combine Mousse
  • Fold the cooled passion fruit mixture into the coconut cream.
  • Stir gently until evenly combined and airy.

Chill

  • Spoon mousse into dessert glasses or molds.
  • Refrigerate about 2 hours until set.

  • Before serving decorate with:

    -Mint Leaves
    -Toasted Coconut
