Bison Stew
Ingredients
- 2½ lbs bison stew meat cut into 1½-inch cubes
- 2 tbsp avocado oil
- 2 tbsp all-purpose flour
- 1½ tsp sea salt
- 1 tsp freshly ground black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 large yellow onion diced
- 3 carrots sliced
- 3 celery stalks sliced
- 1½ lbs Yukon Gold potatoes cubed
- 8 oz mushrooms sliced
- 4 cloves garlic minced
- 4 cups low-sodium beef broth
- 1 cup diced tomatoes
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- 1 cup frozen peas
- 2 tbsp chopped fresh parsley
Instructions
- Season the Meat
- Pat the bison dry.
- Combine flour, salt, pepper, garlic powder, and smoked paprika.
- Toss the bison until evenly coated.
- Brown the Bison
- Heat avocado oil in a large Dutch oven over medium-high heat.
- Brown the meat in batches for 2–3 minutes per side.
- Transfer to a plate.
- Sauté the Vegetables
- Add the onion, carrots, celery, and mushrooms.
- Cook for about 6 minutes until softened.
- Stir in the garlic and cook for another minute.
- Build the Stew
- Return the browned bison to the pot.
- Add the potatoes, broth, diced tomatoes, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves.
- Stir well.
- Simmer
- Bring to a gentle boil.
- Reduce heat to low.
- Cover and simmer for 2½–3 hours, stirring occasionally, until the bison is fork tender.
- Finish
- Stir in the peas during the final 5 minutes of cooking.
- Remove the bay leaves.
- Taste and adjust seasoning.
- Garnish with fresh parsley before serving.
