Ingredients
3–4 lb bison chuck roast
2tbspavocado oil
2tspsea salt
1tspfreshly ground black pepper
2tspgarlic powder
1tsponion powder
1tspsmoked paprika
1tspdried thyme
1tspdried rosemary
1large yellow onionsliced

Instructions
Season the Roast
Pat the bison roast dry with paper towels.
Combine the salt, pepper, garlic powder, onion powder, smoked paprika, thyme, and rosemary.
Rub the seasoning evenly over the roast.
Sear
Heat avocado oil in a large Dutch oven over medium-high heat.
Sear the roast for 3–4 minutes per side until well browned.
Remove and set aside.
Build the Pot
Add onions, carrots, celery, potatoes, and garlic to the Dutch oven.
Stir in the tomato paste.
Pour in the beef broth and Worcestershire sauce.
Add the bay leaves.
Return the roast to the pot.
Cook
Oven Method
Cover tightly and bake at 300°F (150°C) for 3½–4 hours, or until the meat is fork tender.
Slow Cooker Method
Cook on Low for 8–9 hours or High for 5–6 hours.
Serve
Remove the bay leaves.
Slice or shred the roast.
Spoon vegetables and broth over the meat.
Garnish with fresh parsley.
