  • 1 tsp vanilla extract
  • ½ cup brewed coffee cooled
  • ¼ cup fresh orange juice
  • 1 tbsp orange zest

Instructions

Prepare the Oven

  • Preheat oven to 350°F (175°C).
  • Grease and lightly flour a 9 × 5-inch loaf pan or a 9-inch round cake pan.

Mix the Dry Ingredients

  • In a medium bowl, whisk together:

  • Baking powder
  • Baking soda
  • Salt
  • Cinnamon
  • Ginger
  • Cloves
  • Nutmeg
  • Set aside.

Mix the Wet Ingredients

  • In a large bowl, whisk together:
  • Honey
  • Granulated sugar

  • Oil
  • Eggs
  • Vanilla
  • Coffee
  • Orange juice
  • Orange zest
  • Mix until smooth.
  • Combine

Bake

Cool

  • Allow the cake to cool in the pan for 15 minutes.
  • Turn out onto a wire rack and cool completely.
