White Wine Cream Pasta
Ingredients
- 1 lb fettuccine linguine, or spaghetti
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 4 cloves garlic minced
- 1 cup dry white wine such as Pinot Grigio or Sauvignon Blanc
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- ½ tsp sea salt
- ½ tsp freshly ground black pepper
- ¼ tsp crushed red pepper flakes optional
- 1 tsp Italian seasoning
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh basil
- Zest of ½ lemon optional
Instructions
- Cook the Pasta
- Bring a large pot of generously salted water to a boil.
- Cook the pasta according to package directions until al dente.
- Reserve 1 cup of pasta water, then drain.
- Sauté the Garlic
- While the pasta cooks, melt the butter with the olive oil in a large skillet over medium heat.
- Add the garlic and cook for about 1 minute, until fragrant.
- Reduce the Wine
- Pour in the white wine.
- Simmer for 4–5 minutes, allowing it to reduce by about half.
- Make the Sauce
- Reduce heat to low.
- Stir in the heavy cream, Parmesan cheese, Italian seasoning, salt, pepper, and optional red pepper flakes.
- Whisk until the cheese melts and the sauce becomes smooth.
- Combine
- Add the cooked pasta to the skillet.
- Toss gently until evenly coated.
- If needed, add reserved pasta water a little at a time until the sauce reaches the desired consistency.
- Stir in the parsley, basil, and optional lemon zest.
- Serve
- Serve immediately with additional Parmesan cheese and fresh herbs.
