  • Wet:
  • 3 large egg whites 90 g
  • 2 tbsp melted butter or avocado oil 28 g
  • 1 tsp apple cider vinegar

Instructions

  • Activate Yeast
  • Combine warm water + allulose + yeast
  • Let sit 5–10 minutes until foamy
  • 👉 If it doesn’t foam, stop—your rise will fail.
  • Build Dry Matrix
  • Whisk all dry ingredients thoroughly
  • This prevents gum clumping (critical for texture)
  • Combine Wet System
  • Whisk egg whites, oil, vinegar
  • Add yeast mixture
  • Form Dough
  • Mix wet into dry
  • Beat 2–3 minutes (hand mixer or stand mixer)
